  • 3 large eggs
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons chopped scallions
  • 1 pinch sea salt
  • 1 pinch black pepper
  • Avocado oil spray or ghee for the iron

Method

  1. Preheat your waffle iron to a medium-high setting.
  2. In a medium mixing bowl, vigorously whisk the three eggs until slightly frothy.
  3. Season the eggs with a pinch of sea salt and black pepper.
  4. Fold in the shredded cheese and chopped scallions until well combined.
  5. Lightly grease the waffle iron with avocado oil or ghee.
  6. Pour the mixture onto the center of the preheated iron.
  7. Cook for 3 to 5 minutes or until the waffles are golden brown and firm to the touch.
  8. Carefully remove from the iron and serve immediately.

Notes

Ensure your waffle iron is fully preheated before pouring the batter to prevent sticking. You can customize these by adding cooked spinach or diced bell peppers. Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat in a toaster or oven.
