Ingredients

  • 2 lbs shell-on, tail-on shrimp (21-30 count)
  • 1.5 lbs smoked turkey kielbasa or lean beef sausage
  • 2 cups chicken or vegetable broth
  • 1 tbsp Old Bay seasoning
  • 2 cloves garlic, minced
  • 1 lemon, juiced (about 2 tbsp)
  • 1 lb red potatoes, cubed
  • 1 lb sweet corn, husked and halved
  • 1 tbsp non-dairy oil (for the pot)
  • Salt and black pepper to taste

Method

  1. Bring 6 cups water to a boil in a large pot.
  2. Add broth, Old Bay, garlic, lemon juice, salt, and pepper.
  3. Add cubed potatoes and reduce heat to a simmer.
  4. Cook 5 minutes, then add sausage slices and corn.
  5. Add shrimp, cover, and cook 5 minutes until shrimp turn red and float.
  6. Remove corn and sausage first; shrimp are done when shells curl.
  7. Drain, serve with hot sauce, and garnish with fresh parsley.

Notes

Swip potatoes with cauliflower or radishes for low-carb. Use smoked turkey kielbasa for halal compliance. For a vegan option: swap sausage for smoked tofu and shrimp for frozen crab sticks.
Serve with lemon wedges and a sprinkle of paprika.
