Ingredients

  • 2 large chicken breasts, pounded to even thickness
  • 2 tbsp avocado oil
  • 1 tbsp butter
  • 2 large yellow onions, thinly sliced
  • 1 tsp honey
  • 1 tbsp balsamic vinegar
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and black pepper to taste

Method

  1. Season the chicken breasts evenly with salt, pepper, garlic powder, and paprika.
  2. Heat the avocado oil in a large skillet over medium-high heat and sear the chicken until golden brown and cooked through; remove from pan and set aside.
  3. In the same skillet, add butter and the sliced onions, cooking for 10-12 minutes until deeply caramelized.
  4. Stir in the honey and balsamic vinegar to deglaze the pan, scraping up any browned bits.
  5. Lower the heat to medium and stir in the heavy cream and parmesan, simmering until the sauce thickens slightly.
  6. Return the chicken to the pan to coat thoroughly in the creamy onion sauce and serve warm.

Notes

Ensure the chicken is pounded to an even thickness so it cooks uniformly within the 30-minute window. You can serve this dish alongside steamed broccoli or cauliflower mash to keep the meal keto-friendly.
