Ingredients

  • 16 ounces boneless chicken breast
  • 3/4 cup dill pickle juice
  • 3/4 cup super-fine almond flour
  • 3/4 cup parmesan cheese, grated
  • 1/2 teaspoon smoked sea salt
  • 1/2 teaspoon black pepper
  • 2 large eggs, beaten
  • Avocado oil spray

Method

  1. Place the chicken breasts in a bowl and cover with dill pickle juice; let sit for 15-20 minutes to brine.
  2. In a shallow dish, whisk together the almond flour, parmesan, smoked sea salt, and black pepper.
  3. Remove chicken from the brine and pat dry with paper towels.
  4. Dip each chicken breast into the beaten eggs, then coat thoroughly in the almond flour mixture.
  5. Preheat air fryer to 375°F and lightly spray the basket with avocado oil.
  6. Arrange the chicken in a single layer and spray the tops lightly with oil.
  7. Air fry for 12-15 minutes, flipping halfway, until the internal temperature reaches 165°F.

Notes

For a dairy-free version, substitute parmesan with nutritional yeast for a similar umami flavor and color. Always ensure the chicken is arranged in a single layer to allow for maximum air circulation and crispiness. Store leftovers in an airtight container in the refrigerator for up to 3 days.
