Ingredients

  • 4 strips turkey bacon, diced
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup half-and-half
  • 2 lbs Russet potatoes, peeled and cut into 1/2-inch cubes
  • 1/2 cup sour cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and black pepper to taste

Method

  1. In a large heavy-bottomed pot or Dutch oven, crisp the turkey bacon until golden brown, then remove and set aside.
  2. Sauté the diced onion in the pot until translucent, adding minced garlic during the final minute.
  3. Melt the butter in the pot and whisk in the flour, cooking for 2 minutes to create a roux.
  4. Slowly whisk in the chicken broth and half-and-half to prevent clumps, then add cubed potatoes, salt, and pepper.
  5. Simmer for 15-20 minutes until potatoes are fork-tender.
  6. Stir in the sour cream and two-thirds of the cheddar cheese until melted and smooth.
  7. Garnish with the reserved turkey bacon and remaining cheese before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Since the potatoes absorb liquid, the soup will thicken over time; simply thin with a splash of broth or milk when reheating on the stove over low heat. For extra heartiness, consider adding steamed broccoli florets or diced carrots.
