Ingredients

  • 2 cups angel food cake, broken into cubes
  • 2 cups fresh strawberries, hulled and quartered
  • 1.5 cups fresh blueberries
  • 16 oz full-fat cream cheese, softened
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 2 tbsp fresh lemon juice
  • 1 tbsp water (for syrup)
  • 2 tbsp sugar (adjust for keto version)
  • 1 tsp vanilla extract
  • Optional: 1 scoop unflavored whey protein isolate

Method

  1. 1. Prepare a 9x13-inch trifle dish or large glass bowl. Place angel food cake cubes in the bottom layer.
  2. 2. In a bowl, whisk sugar (or sugar substitute for keto), water, and lemon juice to make a syrup. Brush over the cake layer.
  3. 3. Spread half the strawberries and blueberries over the cake, then top with half the cream cheese frosting.
  4. 4. Add the second layer of berries and remaining frosting. Refrigerate for 2 hours before serving.
  5. 5. Garnish with additional berries and a drizzle of lemon syrup

Notes

For keto version: Use almond flour/egg white cake and replace sugar with erythritol/monk fruit. Chill overnight for best results. Fresh berries are essential for texture. Store in the fridge up to 24 hours.
Can serve 12-16 people depending on size.
