Ingredients

  • 1 pound beef steak tips (cut into 1-inch pieces)
  • 2 tablespoons Cajun seasoning (divided)
  • 12 ounces rigatoni pasta
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1 small yellow onion, finely diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1 1/2 cups freshly grated Parmesan cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper

Equipment

  • Large deep skillet or Dutch oven At least 12 inches wide
  • Wooden Spoon
  • Plate For resting steak

Method

  1. Pat steak tips dry and toss with 1 tbsp Cajun seasoning, salt, and pepper. Heat olive oil in a large deep skillet over medium-high heat. Sear steak 2-3 minutes per side until browned. Transfer to a plate.
  2. Reduce heat to medium. Add butter, diced onion, and remaining 1 tbsp Cajun seasoning. Cook 2 minutes until onion softens.
  3. Stir in minced garlic and cook 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a boil. Add rigatoni, stir, cover, and simmer 10-12 minutes until al dente and liquid is mostly absorbed.
  5. Stir in heavy cream and 1 cup Parmesan. Simmer 1-2 minutes until sauce thickens.
  6. Return steak tips to the skillet. Add mozzarella and remaining ½ cup Parmesan. Stir gently 1 minute until cheese melts and steak is warmed through.
  7. Remove from heat. Rest 1-2 minutes. Garnish with parsley and serve.

Notes

Rest 1-2 minutes after adding cheese for the sauce to thicken perfectly. Add a splash of broth when reheating leftovers to restore creaminess. Garnish with fresh parsley.
