- Make the Caesar dressing: In a medium bowl, whisk together mayonnaise, ¼ cup Parmesan, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, sea salt, and black pepper until smooth. Set aside.
- Prepare the crunchy topping: In a small skillet over medium heat, melt butter with 1 tablespoon olive oil. Add panko breadcrumbs and toast, stirring frequently, until golden brown (2–3 minutes). Remove from heat, stir in 2 tablespoons Parmesan. Set aside.
- Season ground chicken: In a bowl, combine ground chicken with garlic powder, onion powder, paprika, ½ teaspoon salt, and ¼ teaspoon pepper. Mix gently.
- Form 8 small balls of the chicken mixture (about 2 tablespoons each). Place one ball onto a tortilla and spread thinly and evenly over the entire surface, pressing to the edges.
- Heat remaining 1 tablespoon olive oil in a large non-stick skillet over medium-high heat. Place tortilla chicken-side down in the skillet. Press down firmly with a spatula. Cook for 3–4 minutes until chicken is fully cooked and deeply browned. Flip and toast the tortilla side for 30 seconds.
- Transfer cooked tacos to a plate. Repeat with remaining tortillas and chicken.
- Assemble: Top each hot taco with shredded romaine lettuce, a generous drizzle of Caesar dressing, and a sprinkle of crispy panko-Parmesan topping. Add extra Parmesan if desired. Serve immediately.
Notes
No alcoholic ingredients used (Worcestershire sauce is non-alcoholic as used here). For keto/low-carb: use low-carb tortillas or romaine lettuce wraps; replace panko with crushed pork rinds or almond flour. For dairy-free: use vegan mayo, dairy-free Parmesan, and olive oil instead of butter. For gluten-free: use corn or GF tortillas and GF panko. Make-ahead: dressing improves after 24 hours; panko topping keeps crisp for 3 days in airtight container.
