Ingredients

  • 2 cups all-purpose flour (or 1:1 gluten-free blend)
  • ¾ cup unsweetened natural cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon espresso powder (optional, enhances chocolate)
  • ½ cup vegetable or canola oil
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • ½ cup sour cream (room temperature)
  • 1 teaspoon non-alcoholic vanilla extract (or vanilla bean paste)
  • 2 cups shredded zucchini (lightly squeezed, not dry)
  • 1 cup semi-sweet chocolate chips (optional)
  • Chocolate Buttercream Frosting (optional, for topping)

Equipment

  • 9x13-inch baking pan or two 9-inch round pans greased and dusted
  • Large mixing bowls (2)
  • Whisk
  • Box Grater for zucchini
  • Clean kitchen towel for squeezing zucchini
  • Spatula
  • Wire Cooling Rack

Method

  1. Preheat oven to 350°F (177°C). Grease a 9x13-inch baking pan or two 9-inch round cake pans. Dust with cocoa powder or flour.
  2. In a large bowl, sift together flour, cocoa powder, baking soda, baking powder, salt, and espresso powder (if using). Set aside.
  3. In a separate large bowl, whisk together oil, granulated sugar, and brown sugar until well combined.
  4. Add eggs one at a time, beating well after each addition. Stir in sour cream and non-alcoholic vanilla extract until glossy and smooth.
  5. Gradually add dry ingredients to wet mixture, mixing just until combined. Do not overmix.
  6. Gently fold in shredded zucchini and chocolate chips (if using) with a spatula.
  7. Pour batter evenly into prepared pan. Bake for 45–55 minutes (9x13) or until a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool cake completely in pan on a wire rack. Frost with chocolate buttercream if desired before serving.

Notes

No alcoholic ingredients used (use non-alcoholic vanilla extract or vanilla bean paste). For keto/low-carb: replace flour with almond/coconut flour blend (3:1 ratio), substitute sugars with monk fruit or erythritol. For dairy-free: replace sour cream with coconut cream or dairy-free yogurt, use vegan butter. For high-protein: replace ½ cup flour with chocolate whey or casein protein powder. For egg-free: use ¼ cup unsweetened applesauce per egg. Freezes beautifully—wrap slices in parchment and store in freezer-safe bag.
