Ingredients

  • 7 large eggs
  • 1 cup baby spinach
  • 1 tablespoon butter
  • 1 clove garlic, thinly sliced
  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1 teaspoon lemon juice
  • 1 tablespoon dehydrated potato flakes
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Method

  1. Place eggs in a pot of cold water, bring to a boil, turn off heat, and let sit for 12 minutes before transferring to an ice bath.
  2. Peel the eggs and slice them in half lengthwise, removing the yolks to a bowl.
  3. Sauté the baby spinach and garlic in butter until wilted and allow to cool completely.
  4. Blend the cooled spinach mixture with the egg yolks, mayonnaise, mustard, lemon juice, and seasonings until smooth.
  5. Fold in the dehydrated potato flakes until the mixture reaches a thick, pipeable consistency.
  6. Transfer the mixture to a piping bag fitted with a star tip.
  7. Pipe the mixture into the egg whites, building vertically to create a tree shape.
  8. Dust with smoked paprika and decorate as desired.

Notes

Ensure the spinach is completely cooled before blending to keep the filling thick and vibrant. If the mixture is too thin, add an additional teaspoon of potato flakes. Keep refrigerated until ready to serve.
