  • 1 cup melted coconut oil
  • 1 cup erythritol or monk fruit sweetener
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup high-fat Greek yogurt
  • 1/2 cup milk
  • 2 tablespoons baking powder
  • 2 tablespoons baking soda
  • 1/2 teaspoon sea salt
  • 12 pineapple slices
  • 1/4 cup cherry juice (non-alcoholic)
  • 1/4 cup chopped walnuts or pecans (optional)

Method

  1. Preheat oven to 350°F (175°C)
  2. Grease a 9-inch round cake pan with coconut oil and arrange pineapple slices cut-side up with cherry juice in a puddle

  4. In a separate bowl, mix coconut oil, sweetener, eggs, and vanilla until smooth
  5. Add Greek yogurt and milk, blending well
  6. Gradually fold dry ingredients into wet mixture until fully incorporated
  7. Spread pineapple slices evenly in the pan, drizzle with remaining cherry juice, and press batter to cover completely
  8. Sprinkle walnuts/pecans over pineapple for texture
  9. Bake for 25-30 minutes or until a toothpick inserted comes out clean
  10. Cool for 20 minutes, then gently invert onto a serving platter
  11. Allow to cool fully before slicing

Notes

Greek yogurt provides protein without alcohol; use dairy-free alternative for vegan option
Erythritol works best for caramelization, but other low-carb sweeteners may require baking time adjustments
Store in an airtight container in the refrigerator for 3-4 days
Can substitute 1/4 cup almond flour with vanilla protein powder for extra boost
