  • 6 large bell peppers, tops removed and seeded
  • 1 tablespoon sun-dried tomato oil
  • 2 shallots, finely diced
  • 3 cloves garlic, minced
  • 200g smoked tofu, crumbled
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tablespoon red miso paste
  • 2 tablespoons nutritional yeast
  • 1.5 cups cooked brown rice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon sugar
  • 1/2 cup vegetable stock (alcohol-free)
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped

Method

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the bell peppers by slicing off the tops and removing the seeds and membranes.
  3. Heat the sun-dried tomato oil in a large pan over medium heat and sauté the shallots until translucent.
  4. Add the minced garlic and cook until fragrant.
  5. Add the crumbled smoked tofu to the pan and brown slightly to develop a golden crust.
  6. Stir in the sun-dried tomatoes, red miso paste, and nutritional yeast until well combined.
  7. Add the cooked rice, oregano, sugar, and vegetable stock, cooking until the liquid is absorbed.
  8. Remove from heat and fold in the fresh basil and parsley.
  9. Stuff each pepper tightly with the rice mixture and place them upright in a baking dish.
  10. Cover with foil and bake for 30-40 minutes or until the peppers are tender.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. The flavors deepen significantly overnight, making this an excellent meal prep option.
