Ingredients

  • 1 lb boneless skinless chicken breast, diced
  • 1 tablespoon olive oil
  • 1 cup yellow onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 6 cups chicken bone broth
  • 1 cup jasmine rice, rinsed
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Method

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery, sautéing until softened.
  3. Stir in the minced garlic and cook for one minute until fragrant.
  4. Sprinkle the flour over the vegetables and stir to coat, cooking for 1-2 minutes to create a base.
  5. Slowly pour in the chicken broth while whisking constantly to prevent lumps.
  6. Add the diced chicken and rinsed jasmine rice to the pot.
  7. Bring to a simmer, cover, and cook for 15-20 minutes until chicken is cooked through and rice is tender.
  8. Reduce heat to low and stir in the heavy cream until combined and heated through.
  9. Season with salt and pepper to taste and serve garnished with fresh parsley.

Notes

Store in an airtight container for up to three days. If the soup thickens too much due to the rice absorbing liquid, add a splash of broth or water when reheating on the stovetop. Reheat gently to keep the cream from separating.
