Ingredients

  • 1.5 lbs boneless skinless chicken breasts
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp cumin
  • 1 tsp oregano
  • 1 tsp chili powder
  • 0.25 tsp cayenne pepper
  • 4 cups chicken broth (low sodium)
  • 2 cans Great Northern beans, rinsed and drained
  • 1 can diced green chiles
  • 1 cup frozen corn
  • 4 oz reduced-fat cream cheese, softened
  • 0.25 cup half-and-half

Method

  1. Place chicken breasts at the bottom of the slow cooker.
  2. Top chicken with diced onion and minced garlic.
  3. Add salt, pepper, cumin, oregano, chili powder, and cayenne over the top.
  4. Pour in the chicken broth, beans, green chiles, and frozen corn.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Carefully remove the chicken and shred with two forks.
  7. Return shredded chicken to the pot.
  8. Stir in the softened cream cheese and half-and-half.
  9. Cover and cook for another 15-20 minutes until the texture is creamy and combined.

Notes

Ensure the cream cheese is softened to room temperature before adding to prevent clumps. For a thicker chili, mash a small portion of the beans against the side of the pot before stirring in the dairy. Store leftovers in an airtight container in the refrigerator for up to 4 days.
