Ingredients

  • 2 tablespoons butter
  • 1 cup onion, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped
  • 0.5 teaspoon mustard powder
  • 0.5 teaspoon dried sage
  • 0.25 teaspoon black pepper
  • 6 cups chicken or turkey broth
  • 1 bay leaf
  • 1 teaspoon Worcestershire sauce (ensure no alcohol)
  • 2 dashes hot sauce
  • 2 cups bowtie pasta
  • 2 cups cooked turkey or chicken, shredded

Method

  1. Melt butter in a large pot over medium heat.
  2. Add onion, carrots, and celery, cooking until softened, about 5-7 minutes.
  3. Stir in garlic, basil, oregano, parsley, mustard powder, sage, and pepper; toast for 1 minute.
  4. Pour in the broth and add the bay leaf, Worcestershire sauce, and hot sauce; bring to a boil.
  5. Stir in the bowtie pasta and simmer for 8-10 minutes until tender.
  6. Fold in the shredded turkey or chicken and heat for 2-3 minutes.
  7. Remove the bay leaf and adjust seasonings before serving.

Notes

To make this meal keto-friendly, omit the bowtie pasta and replace it with riced cauliflower or fresh spinach. Ensure your Worcestershire sauce is alcohol-free. Do not add the pre-cooked meat too early to avoid a tough, stringy texture.
