Ingredients

  • 600g boneless, skinless chicken breast (sliced into strips)
  • 300g traditional wheat pasta (or substitute with zucchini zoodles or lentil-based noodles)
  • 4-6 tbsp Garlic and Herb Boursin cheese (softened)
  • 2 tbsp olive oil
  • 1 cup pasta water (or broth)
  • Salt and pepper to taste
  • 1 cup fresh spinach or kale (optional)
  • Grated vegetarian Parmesan cheese (optional topping)

Method

  1. Heat olive oil in a large skillet over medium heat
  2. Cook chicken strips until golden and fully cooked (12-15 minutes)
  3. Add softened Boursin cheese, stirring until melted into a smooth sauce
  4. Toss in cooked pasta, mixing to coat thoroughly
  5. If sauce is too thick, add pasta water (or broth) and stir gently
  6. Fold in spinach or kale during the final 2 minutes of simmering
  7. Top with Parmesan (if using) and serve warm

Notes

Substitute Parmesan with nutritional yeast for a vegan option
Use a non-dairy cooking alternative if avoiding animal products
Boursin cheese is halal-compliant but verify brand specifications if required
Add zucchini zoodles at the end for best texture
