Ingredients

  • 4 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups vegetable broth
  • 2 cups whole milk
  • 3 cups fresh broccoli florets, chopped small
  • 1 cup carrots, julienned
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Method

  1. Melt the butter in a large heavy-bottomed pot over medium heat.
  2. Add the onion and sauté until translucent and sweet, then stir in the garlic until fragrant.
  3. Sprinkle the flour over the onion mixture and whisk constantly for 2 minutes to cook the roux.
  4. Gradually whisk in the milk and vegetable broth until smooth.
  5. Bring the liquid to a gentle simmer.
  6. Add the broccoli florets and julienned carrots, cooking until the vegetables are tender.
  7. Remove the pot from the heat and stir in the shredded cheddar cheese until completely melted.
  8. Whisk in the Dijon mustard and season with salt and pepper to taste before serving.

Notes

Ensure the cheese is added off the heat to prevent it from turning grainy.
Use a high-quality, sharp cheddar for the best flavor payoff.
If you prefer a smoother soup, you can use an immersion blender before adding the cheese.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
