Ingredients

  • 1 lb chicken andouille sausage, sliced
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • 2 lbs Yukon Gold potatoes, cubed
  • 2 tbsp Cajun seasoning
  • 1 cup heavy cream
  • Salt and pepper to taste

Method

  1. In a large Dutch oven, brown the chicken andouille sausage over medium heat until fragrant.
  2. Add the onion and celery to the pot and sauté until softened.
  3. Stir in the minced garlic and cook for one additional minute.
  4. Sprinkle the flour over the vegetables and sausage, stirring constantly for 2-3 minutes to cook off the raw flour taste.
  5. Gradually whisk in the chicken broth and milk to prevent any lumps.
  6. Add the cubed potatoes and Cajun seasoning to the pot.
  7. Cover and simmer over low-medium heat until the potatoes are fork-tender.
  8. Stir in the heavy cream right before serving to achieve a velvet finish.

Notes

For a healthier version, substitute heavy cream with half-and-half or a mix of milk and Greek yogurt. To reduce carbohydrates, replace half of the potatoes with cauliflower florets. If using a slow cooker, brown the sausage and aromatics first, then cook on low for 6-7 hours, adding the cream in the final 30 minutes.
