Ingredients

  • 1 lb boneless, skinless chicken breast, diced
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 tablespoon tomato paste
  • 4 cups chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1/2 cup heavy cream
  • 1/2 cup Parmesan Reggiano, grated
  • 1 teaspoon Italian seasoning
  • 2 cups fresh baby spinach
  • Salt and black pepper to taste

Method

  1. Heat olive oil in a large pot over medium-high heat.
  2. Season diced chicken with half of the Italian seasoning, salt, and pepper, then brown until golden and set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add minced garlic and tomato paste, cooking for one minute until fragrant.
  5. Pour in chicken broth, scraping the bottom of the pot to release browned bits.
  6. Return chicken to the pot and bring to a gentle simmer.
  7. Stir in the sun-dried tomatoes and cook until chicken is fully cooked through.
  8. Lower the heat, stir in the heavy cream and Parmesan cheese until smooth and thickened.
  9. Fold in the fresh spinach just before serving until wilted.

Notes

Use a heavy-bottomed pot to ensure even heat distribution. For a heartier meal, you can add small pasta shapes like orzo or ditalini directly into the broth. Store leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop, adding a splash of broth if the cream base thickens too much.
