Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 large carrots, diced into small, uniform cubes
  • 2 large potatoes, peeled and diced into small cubes
  • 3 tablespoons all-purpose flour
  • 4 cups vegetable broth
  • 1 cup sharp yellow cheddar cheese, shredded
  • 1 cup whole milk
  • Salt and black pepper to taste

Method

  1. Melt the butter in a large pot over medium-high heat.
  2. Add the diced onion and minced garlic, sautéing until fragrant and translucent.
  3. Add the carrots and potatoes, tossing them in the butter for 2 to 3 minutes to draw out their natural sweetness.
  4. Sprinkle the flour over the vegetables and stir well, cooking for 1 minute to ensure a smooth, professional base.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat to a simmer and cook until the vegetables are tender, approximately 8 to 10 minutes.
  7. Stir in the milk and shredded cheddar cheese, whisking gently until the cheese has melted and the soup is creamy.
  8. Season with salt and pepper to taste and serve immediately.

Notes

For a smoother consistency, use an immersion blender to partially puree the soup before adding the cheese. To boost protein, stir in cooked shredded chicken breast or canned chickpeas. Store leftovers in an airtight container in the refrigerator for up to 3 days.
