Ingredients
Method
- Preheat your oven to 425°F (220°C).
- Scrub the russet potatoes thoroughly and pat them completely dry.
- Place each potato between two wooden spoons and make thin, even slices across the potato, using the spoons as guides to ensure you do not cut through the bottom.
- In a small bowl, whisk together the melted butter, avocado oil, minced garlic, sea salt, and black pepper.
- Place the potatoes on a parchment-lined baking sheet and brush the butter mixture generously over them, ensuring the liquid drips into the internal slits.
- Bake for 30–40 minutes until the edges are crispy and the center is fork-tender.
- Carefully tuck small squares of sharp cheddar cheese into every other slit and sprinkle the crumbled turkey-based bacon over the top.
- Return to the oven for 5 minutes until the cheese is bubbling.
- Remove from the oven, garnish with fresh chives, and serve immediately.
Notes
Ensure potatoes are thoroughly dried to maximize crispiness. Using an air fryer is possible; reduce temperature to 400°F and monitor closely for burning. Use two wooden spoons or chopsticks as a guide for perfect slicing depth.
