Ingredients

  • 3 pounds corned beef (flat or point cut)
  • 2 cups water
  • 1 cup apple cider vinegar
  • 2 tablespoons granulated sugar
  • 3 cloves garlic, minced
  • 1 bay leaf
  • Seasoning packet (included with corned beef)

Method

  1. Rinse corned beef under cold water to remove excess salt. Pat dry.
  2. Place in a 6-quart slow cooker.
  3. In a bowl, combine water, apple cider vinegar, sugar, minced garlic, and black pepper. Pour over the beef.
  4. Sprinkle seasoning packet and bay leaf on top.
  5. Cook on low for 8 to 10 hours until tender.
  6. Preheat oven's broiler. Place beef on a rack over a baking sheet and broil 8-10 minutes for crisp edges, watching closely to avoid burning.

Notes

Rinsing the beef prevents overly salty results.
For extra flavor, use point-cut brisket for marbling.
Broiling is optional but recommended for a caramelized crust.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
