Ingredients

  • 4 lbs russet potatoes, peeled and cut into 1-inch cubes
  • 1 large yellow onion, finely chopped
  • 4 cups chicken broth
  • 4 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1 cup cooked lean beef crumbles (substitute for bacon)
  • 1 cup shredded cheddar cheese
  • 1/4 cup fresh chives, chopped
  • Salt and black pepper to taste

Method

  1. Place the diced potatoes and chopped onions into the slow cooker.
  2. Pour in the chicken broth and add the butter on top.
  3. Cover and cook on high for 3-4 hours or low for 6-7 hours until potatoes are fork-tender.
  4. In a small bowl, whisk the flour with a splash of warm broth to create a smooth slurry.
  5. Stir the slurry into the slow cooker during the final hour of cooking.
  6. Stir in the heavy cream and sour cream, allowing the soup to warm through for an additional 15 minutes.
  7. Serve hot, garnished with beef crumbles, shredded cheddar cheese, and fresh chives.

Notes

For a smoother consistency, use a potato masher directly in the slow cooker to break up some of the potatoes. Ensure the dairy is at room temperature before adding to prevent curdling. Store leftovers in an airtight container in the refrigerator for up to 3 days.
