Ingredients

  • 2 tbsp butter
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 cups Yukon Gold potatoes, peeled and cubed
  • 1 cup evaporated milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 2 cups nonfat plain Greek yogurt
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp ground black pepper
  • 2 cups water
  • 0.5 tbsp xanthan gum (optional for thicker texture)
  • 1 cup cauliflower florets (optional, for keto variation)
  • 1 cup shredded cooked rotisserie chicken (optional protein boost)

Method

  1. Heat butter in a skillet, sauté onions and garlic until tender.
  2. Transfer mixture to the crockpot along with Yukon Gold potatoes, ground cumin, salt, and black pepper.
  3. Add 2 cups water and 1 cup evaporated milk to the crockpot.
  4. Cook on low for 8 hours (or high for 4-6 hours) until potatoes are tender.
  5. Using an immersion blender, blend the soup until smooth.
  6. Stir in 1 1/2 cups sharp cheddar cheese and 2 cups nonfat Greek yogurt until fully melted/mixed.
  7. Optional: For keto, substitute 1 cup of potatoes with cauliflower florets and add xanthan gum to thicken.
  8. Optional: Add shredded chicken during the last 30 minutes of cooking for extra protein.

Notes

For vegan adaptation, use olive oil instead of butter and substitute dairy products with vegan versions.
Cheese and yogurt can be omitted for a mild version but will reduce protein content.
Leftover soup keeps up to 5 days in the fridge; freeze for up to 3 months.
Add extra seasonings like smoked paprika, thyme, or cayenne for customized flavor.
