Ingredients

  • 1 large English cucumber (about 12-14 inches), chopped into ½-inch chunks
  • 8 ounces fresh mozzarella pearls, drained
  • 1 cup grape tomatoes, halved lengthwise
  • ½ cup fresh basil leaves, chiffonade or torn
  • ¼ cup balsamic vinaigrette (or balsamic glaze)
  • ½ teaspoon salt (for pre-salting cucumber)
  • optional Grilled turkey breast strips (for added protein)
  • optional Toasted sunflower seeds or pumpkin seeds (for nut-free crunch)

Equipment

  • Colander
  • Large mixing bowl
  • Silicone tongs

Method

  1. Chop the English cucumber into ½-inch chunks. Place in a colander, sprinkle with salt, and let sit for 10 minutes. Pat dry with paper towels to remove excess moisture.
  2. While cucumbers drain, halve the grape tomatoes lengthwise and drain the mozzarella pearls.
  3. In a large bowl, combine the dried cucumber chunks, halved tomatoes, mozzarella pearls, and fresh basil.
  4. Drizzle balsamic vinaigrette over the salad and toss gently with silicone tongs to avoid breaking the cheese or bruising the tomatoes.
  5. Serve immediately or refrigerate for up to 4 hours. If adding optional protein or seeds, fold them in just before serving.

Notes

No alcoholic ingredients used. Pork-free. For dairy-free: substitute mozzarella with cubed avocado. For extra protein: add grilled turkey breast strips seasoned with Italian herbs. For nut-free crunch: add toasted sunflower or pumpkin seeds. Pre-salt cucumbers and pat dry to prevent sogginess. Best enjoyed within 4 hours of assembly. For meal prep, store vegetables and cheese separate from dressing.
