Method
- Remove outer leaves from cabbage. Cut in half, remove core, and slice into thin ⅛-inch ribbons. Slice onion into thin half-moons and mince garlic.
- Melt butter (or olive oil) in a large heavy skillet or Dutch oven over medium-low heat.
- Add sliced onion and a pinch of salt. Cook 8–10 minutes until soft and translucent with faint golden edges.
- Stir in minced garlic for 30 seconds. Add cabbage in batches, tossing to coat. Sprinkle with salt, pepper, and caraway seeds. Cook uncovered 5 minutes.
- Pour in broth or water. Cover and simmer on lowest heat for 25–30 minutes, stirring occasionally, until cabbage is extremely tender.
- Uncover and cook 5–10 minutes more until excess liquid evaporates. Stir in apple cider vinegar and adjust seasoning.
- Rest 2–3 minutes off heat. Garnish with fresh herbs if desired and serve hot.
Notes
For best texture, slice cabbage very thinly. The dish tastes even better the next day. All ingredients are non-alcoholic. Vegan option: replace butter with olive oil.
