Ingredients

  • 1 large sweet potato, finely grated
  • 4 large eggs
  • 1 tablespoon coconut flour
  • 1 tablespoon spring onion greens, finely chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Coconut oil for greasing

Method

  1. Peel the sweet potato and grate it finely using a box grater.
  2. In a large mixing bowl, beat the four eggs until frothy.
  3. Add the grated sweet potato, chopped spring onion greens, coconut flour, garlic powder, salt, and pepper to the eggs.
  4. Mix thoroughly until the batter is well-combined and the coconut flour has hydrated.
  5. Preheat your waffle iron to its maximum heat setting.
  6. Generously brush the waffle iron grids with melted coconut oil to prevent sticking.
  7. Pour the batter onto the hot iron and cook until the waffles are golden brown and crispy.
  8. Remove carefully and serve warm.

Notes

Make sure to grate the sweet potato very finely to ensure it cooks through within the waffle iron's cycle.
Do not skip greasing the waffle iron, as Paleo batter lacks the gluten-based elasticity of traditional waffles and may stick.
These waffles are excellent for meal prep and can be reheated in a toaster or oven.
For a smoother texture, you can squeeze excess moisture from the grated sweet potato using a clean kitchen towel before adding it to the eggs.
