Ingredients

  • 2 cups raw broccoli florets (chopped small)
  • 6 slices beef or turkey bacon
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon sugar (or monk fruit erythritol for keto)
  • 1/4 cup finely chopped red onion
  • 1/4 cup salted sunflower seeds
  • 1/4 cup raisins or raspberries (optional)
  • Pinch of chili flakes (optional)
  • Salt and pepper to taste

Method

  1. Chop broccoli into small florets (1/4" size)
  2. Crumble and cook bacon in a skillet until crisp; drain on paper towels
  3. In a large bowl, mix mayonnaise, apple cider vinegar, sugar, red onion, and a pinch of salt/pepper
  4. Add crumbled bacon, broccoli, and sunflower seeds to the dressing; toss thoroughly
  5. Fold in raisins or raspberries if using
  6. Optional: For improved digestibility, flash blanch broccoli (60 second boil + ice bath) before tossing

Notes

For keto version, swap sugar for monk fruit erythritol and substitute raisins with raspberries
Store in airtight container for up to 2 days (best at room temperature for optimal texture)
Can be assembled without flash blanching to maintain raw broccoli crunch
