Easy French Toast Roll-Ups

These fun and handheld French Toast Roll-Ups are the ultimate breakfast hack for busy mornings. Perfect for toddlers and kids alike, these golden-brown rolls feature a creamy center and a crispy, cinnamon-sugar coating. By flattening the bread, we create a dense, chewy texture that is easy to manage in a skillet, making them far less messy than traditional French toast. They are highly customizable and packed with energy, providing a delicious way to ensure your little ones start their day with a hearty, nutrient-dense breakfast.

Ingredients

  • 8 slices white sandwich bread
  • 4 tablespoons softened cream cheese
  • 1/2 cup diced fresh strawberries or hazelnut spread
  • 2 large eggs
  • 3 tablespoons milk
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter for the skillet

Method

  1. Trim the crusts off the sandwich bread slices.
  2. Use a rolling pin to flatten each slice of bread as thin as possible.
  3. Spread a thin layer of cream cheese or hazelnut spread over each flattened slice.
  4. Add a few diced strawberries if using, then roll the bread tightly starting from one end.
  5. In a shallow bowl, whisk the eggs and milk together until smooth.
  6. In a separate small bowl, mix the granulated sugar and cinnamon.
  7. Melt butter in a non-stick skillet over medium heat.
  8. Dip each roll-up quickly into the egg wash, ensuring it is coated but not soggy.
  9. Place the roll-ups seam-side down in the skillet and cook until golden brown on all sides.
  10. Remove from the skillet and immediately roll them in the cinnamon-sugar mixture until coated.

Notes

Ensure you roll the bread tightly to prevent the filling from leaking. Use a non-stick pan to prevent sticking during the cooking process. For a dairy-free version, use vegan cream cheese and plant-based milk. You can store leftovers in an airtight container in the refrigerator for up to 2 days; reheat in a toaster oven for best results.
