Ingredients

  • 1.5 lbs chicken thighs, trimmed and cut into 1-inch chunks
  • 1 lb gold potatoes, cut into 1/2-inch cubes
  • 4 tablespoons ghee or unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Method

  1. Heat half of the ghee or butter in a large heavy-bottomed skillet over medium-high heat.
  2. Add potato cubes in a single layer and cook for 6-8 minutes until a golden crust develops.
  3. Push potatoes to the sides and add the chicken chunks to the center of the skillet.
  4. Season the chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  5. Sear the chicken until browned on all sides.
  6. Add the remaining butter, minced garlic, rosemary, and thyme to the skillet.
  7. Toss everything together and reduce heat to medium-low.
  8. Cover the skillet and cook for 5-7 minutes until the potatoes are tender and chicken is cooked through.
  9. Remove the lid, increase heat slightly to evaporate excess moisture if needed, and toss with fresh parsley before serving.

Notes

Ensure potatoes are cut into uniform 1/2-inch pieces for even cooking. Using high-quality ghee provides a higher smoke point for a better sear. Store leftovers in an airtight container in the refrigerator for up to 3 days.
