Ingredients

  • 6 ripe peaches, pitted and sliced (5 cups)
  • 2 tablespoons all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 3/4 cup whole rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1/2 cup cold unsalted butter, cubed

Method

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish with butter.
  2. In a large bowl, toss the sliced peaches with the flour, sugar, lemon juice, and vanilla extract until evenly coated.
  3. Transfer the peach mixture to the prepared baking dish.
  4. In a separate mixing bowl, combine the oats, flour, brown sugar, cinnamon, and sea salt.
  5. Cut the cold, cubed butter into the dry mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  6. Sprinkle the topping evenly over the peach mixture.
  7. Bake for 35 to 40 minutes, or until the fruit is bubbling and the topping is golden brown.

Notes

Use cold butter to ensure the topping stays crisp. You can serve this warm with a scoop of vanilla bean ice cream or fresh whipped cream for an extra indulgence. Store leftovers in an airtight container in the refrigerator for up to 3 days.
