Ingredients

  • 1 lb skinless, boneless chicken breast, cut into 1-inch cubes
  • 2 cups broccoli florets
  • 3 tbsp honey
  • 4 garlic cloves, minced
  • 3 tbsp low-sodium chicken broth
  • 2 tbsp cornstarch
  • 1 tbsp olive oil or avocado oil
  • 1 tsp sesame oil (optional)
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

Method

  1. Heat oil in a large skillet or wok over medium-high heat. Sear chicken cubes for 3-4 minutes per side until golden. Remove and set aside.
  2. In the same skillet, add broccoli and sauté for 2 minutes until bright green. Return cooked chicken to the pan.
  3. Combine honey, garlic, broth, cornstarch, sesame oil, salt, and pepper in a small bowl. Pour into the skillet.
  4. Simmer for 2 minutes until sauce thickens and coats the chicken and broccoli. Stir gently to avoid breaking chicken.

Notes

For keto: Substitute honey with 2.5 tbsp monk fruit liquid sweetener and cornstarch with 0.5 tsp xanthan gum.
Use frozen broccoli (defrosted) for extra convenience.
Store in airtight containers for up to 4 days. Reheat gently to preserve sauce consistency.
