Ingredients
Method
- In a large Dutch oven, cook turkey bacon over medium heat until crispy, then remove and set aside.
- In the same pot, melt butter and add onions, cooking until softened.
- Stir in garlic and cook for 1 minute until fragrant.
- Sprinkle flour over the aromatics and stir constantly for 2 minutes to cook out the raw flour taste.
- Slowly whisk in the chicken broth to avoid lumps, then add the cubed potatoes.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are fork-tender.
- Use a potato masher or immersion blender to lightly crush some of the potatoes to thicken the soup.
- Stir in the milk and sour cream, heating through without letting it boil.
- Serve topped with crispy turkey bacon, shredded cheddar, and sliced green onions.
Notes
To make this soup heartier, add 1 cup of cooked, shredded chicken breast before serving. For a lower-carb version, substitute half of the potatoes with cauliflower florets. Store leftovers in an airtight container in the refrigerator for up to 3 days.
