Ingredients

  • 2 cups mixed frozen potstickers (chicken or beef filling, no pork)
  • 2 cups broccoli florets
  • 1 cup sliced cabbage
  • 1 cup stir-fry vegetables (carrots, snow peas, bell peppers)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1/2 cup chicken or vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cornstarch (for sauce thickening)
  • 2 cups cooked rice or cauliflower rice (optional low-carb option)
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup chopped green onions for garnish
  • Cooking spray or additional olive oil for the pan

Method

  1. Heat 1 tablespoon olive oil in a wok or large skillet over medium-high heat.
  2. Add minced garlic and grated ginger; sauté for 1-2 minutes until aromatic.
  3. Push garlic mixture to the pan edge and add frozen potstickers. Cover with broth and let simmer 5 minutes.
  4. Add broccoli, carrots, and cabbage; stir fry for 3-4 minutes until vegetables are tender-crisp.
  5. In a small bowl, whisk soy sauce, rice vinegar, honey, cornstarch, and remaining sesame oil. Pour into the pan; stir until sauce thickens.
  6. Stir in remaining olive oil for a glossy finish. Serve over rice or cauliflower rice.
  7. Top with green onions and an additional drizzle of sesame oil if desired.

Notes

Use any non-pork potsticker variety or opt for 'naked' dumplings for lower carbs.
For keto: replace rice with 2 cups of cauliflower rice and double broccoli/mushroom content.
Tamari can substitute soy sauce for gluten-free compliance.
Add 1/2 cup cooked edamame for a protein boost.
Store leftovers in an airtight container for up to 3 days; reheat gently to avoid sogginess.
