Ingredients

  • 1.5 lbs baby potatoes, quartered
  • 3 tbsp extra virgin olive oil
  • 1 tbsp fresh thyme leaves
  • 1/2 cup turkey crumbles, roasted and seasoned
  • 1 shallot, finely minced
  • 1 tbsp yellow mustard
  • 2 tbsp apple cider vinegar
  • Sea salt and cracked black pepper to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes and cut them into even quarters to ensure consistent roasting.
  3. In a bowl, toss the potatoes with 2 tablespoons of olive oil, fresh thyme, salt, and pepper.
  4. Spread potatoes in a single layer on a baking sheet and roast for 25-30 minutes until golden and crispy.
  5. In a small jar, whisk together the remaining olive oil, apple cider vinegar, yellow mustard, and minced shallots to create the dressing.
  6. In a large bowl, combine the roasted potatoes and turkey crumbles.
  7. Pour the dressing over the salad and toss gently to coat before serving.

Notes

Ensure you use certified Whole30 compliant turkey crumbles. For extra crispiness, roast the turkey bits alongside the potatoes for the last 10 minutes of cooking. Store in an airtight container for up to 3 days in the refrigerator.
