Ingredients

  • 4 chicken breast cutlets, pounded to 1/2 inch thickness
  • 1 cup Panko breadcrumbs
  • 1/2 cup standard breadcrumbs
  • 1 egg
  • 2 tbsp milk
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/4 cup salted butter, softened
  • 2 tbsp mayonnaise
  • 2 cloves garlic, minced
  • 2 tbsp grated Parmesan cheese
  • 4 baguette rolls
  • 1/2 cup Caesar dressing (homemade with mayo, sour cream, and anchovy paste)
  • 1 cup shredded romaine lettuce

Method

  1. Slice chicken breasts into four even cutlets and pound to a 1/2-inch thickness.
  2. Season the chicken with salt, pepper, and garlic powder.
  3. Set up a dredging station with beaten egg and milk in one bowl and a mix of Panko and breadcrumbs in another.
  4. Dip each cutlet in the egg wash, then press firmly into the breadcrumb mixture to coat.
  5. Heat vegetable oil in a pan over medium-high heat and fry chicken until golden brown and cooked through.
  6. Mix the softened butter, mayonnaise, minced garlic, and Parmesan to create the garlic butter schmear.
  7. Slice the baguette rolls open and spread the garlic butter inside.
  8. Toast the rolls in a pan or oven until golden.
  9. Place the cooked chicken inside each roll, top with homemade Caesar dressing and shredded romaine lettuce.

Notes

Use Greek yogurt in the Caesar dressing for an extra protein boost. Ensure the anchovy paste is fully incorporated into the dressing for the best umami flavor. Store chicken separately from bread to keep sandwiches from getting soggy.
