Ingredients

  • 12 oz fettuccine or linguine pasta
  • 1 lb chicken breast, cut into bite-sized pieces
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish
  • 1/2 cup reserved pasta water

Method

  1. Bring a large pot of salted water to a boil and cook pasta until al dente.
  2. Reserve 1/2 cup of pasta water, then drain the rest.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Season chicken with salt and pepper, then sear in the skillet until golden brown and cooked through; remove chicken from the pan.
  5. In the same skillet, melt the butter and add the minced garlic, sautéing until fragrant.
  6. Pour in the heavy cream and bring to a gentle simmer.
  7. Stir in the freshly grated parmesan cheese until the sauce is smooth and thickened.
  8. Return the chicken to the pan and toss in the cooked pasta.
  9. Use reserved pasta water as needed to adjust the sauce consistency.
  10. Garnish with fresh parsley and serve immediately.

Notes

Always use freshly grated parmesan rather than pre-shredded to ensure the sauce does not become grainy due to anti-caking agents. Adjust the consistency of the sauce using the reserved starchy pasta water just before serving.
