Ingredients

  • 1 lb penne pasta
  • 2 large chicken breasts, sliced into thin cutlets
  • 1 cup Italian-style breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 3 tbsp olive oil
  • 4 tbsp butter
  • 4 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • Fresh parsley for garnish

Method

  1. Bring a large pot of salted water to a boil and cook the penne according to package directions.
  2. In a shallow dish, combine breadcrumbs, parmesan, garlic powder, and salt. Dredge chicken cutlets in the mixture until coated.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown and cooked through; remove and set aside.
  4. In the same skillet, melt butter over medium heat. Sauté minced garlic for 30 seconds until fragrant.
  5. Whisk in the flour and cook for 1 minute.
  6. Gradually pour in heavy cream and chicken broth, whisking constantly until the sauce thickens.
  7. Add the cooked pasta to the sauce, toss to coat, and serve topped with the sliced chicken and fresh parsley.

Notes

Work in batches when searing the chicken to ensure a crispy crust. If the sauce becomes too thick, add a splash of reserved pasta water to reach your desired consistency.
