Ingredients

  • 2 lb Ribeye steak, trimmed and cut into 1-inch cubes
  • 1/2 tbsp Fresh rosemary, finely minced
  • 1/2 tbsp Fresh thyme, finely minced
  • 4 Garlic cloves, pressed or finely minced
  • 1 tsp Sea salt
  • 1/2 tsp Freshly cracked black pepper
  • 3 tbsp Avocado oil
  • 3 tbsp Unsalted grass-fed butter

Method

  1. Pat the cubed ribeye completely dry using paper towels to ensure a proper sear.
  2. Toss the steak cubes in a bowl with sea salt and cracked pepper until evenly coated.
  3. Place a large cast-iron skillet over medium-high heat and add the avocado oil until shimmering.
  4. Add the steak cubes in batches, searing undisturbed for 2 minutes on the first side, then flip for 1-2 minutes until a deep crust forms.
  5. Reduce heat to medium and add the butter, garlic, rosemary, and thyme to the pan.
  6. Once the butter foams, spoon the aromatic mixture over the steak bites for one final minute of cooking.
  7. Remove from the pan and allow the steak to rest for 3 minutes before serving.

Notes

For a dairy-free version, substitute the butter with ghee or additional avocado oil. For the best texture, ensure the steak is at room temperature before searing and do not overcrowd the pan.
