Ingredients

  • 1 lb lean ground beef
  • 1 shallot, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp dried oregano
  • 1/2 tsp ground cumin
  • 3 large carrots, sliced into rounds
  • 2 tbsp olive oil (for vegetables)
  • 2 cups cooked rice or quinoa
  • 2 cups shredded lettuce
  • 1 cup mini cucumbers, chopped
  • 1 cup grape tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1 tbsp red wine vinegar
  • 1/4 cup crumbled feta cheese
  • Fresh parsley for garnish
  • Salt and pepper to taste

Method

  1. Preheat your oven to 400°F (200°C).
  2. Peel and slice carrots into uniform rounds and toss with olive oil, salt, and pepper on a baking sheet.
  3. In a large bowl, combine ground beef, shallot, garlic, olive oil, honey, oregano, cumin, salt, and pepper.
  4. Mix gently and form into 1.5-inch meatballs.
  5. Place meatballs on the baking sheet and roast alongside carrots for 18-22 minutes until fully cooked.
  6. In a separate bowl, toss cucumbers, tomatoes, and red onion with red wine vinegar, olive oil, salt, and pepper.
  7. Assemble bowls by layering rice and lettuce, followed by roasted carrots, meatballs, and the cucumber salad.
  8. Top with crumbled feta and fresh parsley.

Notes

Store the components in separate airtight containers in the refrigerator for up to 4 days. When reheating, it is best to warm the meatballs and carrots, then add the fresh salad components after reheating to maintain texture.
