Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 1 tsp ground cumin
  • 2 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 ripe mangoes, diced
  • 1/4 cup red onion, finely diced

Method

  1. In a non-reactive bowl, whisk together lime juice, olive oil, honey, soy sauce, cumin, garlic, cilantro, salt, and pepper.
  2. Place chicken in a sealed container or bag, pour the marinade over it, and ensure all surfaces are coated.
  3. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  4. Heat a skillet over medium-high heat and sear the chicken for 6-8 minutes per side until the internal temperature reaches 165°F (74°C).
  5. While chicken rests, combine diced mango, red onion, remaining cilantro, and a splash of lime juice in a bowl.
  6. Serve the warm chicken topped with the fresh mango salsa.

Notes

For a lower-carb version, replace honey with a monk fruit sweetener. Ensure the chicken reaches 165°F to guarantee food safety. Store leftovers in an airtight container for up to 3 days.
