Ingredients

  • 2 tablespoons olive oil
  • 1 lb garlic chicken sausage, sliced
  • 1 cup dry quinoa, rinsed
  • 2 cups low-sodium vegetable broth
  • 3 cups fresh baby spinach
  • 2 tablespoons coconut aminos
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Optional: soft-boiled eggs or toasted pepitas for topping

Method

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add sliced chicken sausage and sauté until golden brown and charred.
  3. Add dry quinoa to the pan and toast for 2 minutes until fragrant.
  4. Pour in the vegetable broth, garlic powder, salt, and pepper.
  5. Reduce heat to low, cover, and simmer for 15-18 minutes until liquid is absorbed and quinoa is fluffy.
  6. Remove from heat, stir in the baby spinach until wilted, and drizzle with coconut aminos.
  7. Sprinkle with red pepper flakes and serve warm with optional toppings.

Notes

Store in airtight containers for up to 4 days for meal prep. For a keto-friendly version, reduce quinoa to 1/2 cup and increase spinach or add zucchini. Toasting the quinoa before adding liquid is key to the nutty flavor base.
