  • 2 cups chopped cooked chicken (rotisserie or grilled breast)
  • 2 cloves fresh garlic, minced
  • 1/2 cup light mayonnaise
  • 1/2 cup light Greek yogurt
  • 3/4 cup shredded cheddar cheese blend
  • 1 tsp hot sauce
  • 4 large flour tortillas
  • 1 tbsp olive oil spray
  • Optional: 1/4 cup chopped fresh cilantro or green onions

Method

  1. Chop cooked chicken into bite-sized pieces
  2. In a bowl, mix garlic, mayonnaise, Greek yogurt, hot sauce, and 1/4 cup cheese until combined
  3. Fold in chicken pieces to coat evenly
  4. Spoon chicken mixture into each tortilla, spreading slightly
  5. Sprinkle remaining 1/4 cup cheese over the top
  6. Lightly mist tortillas with olive oil spray
  7. Heat a large skillet over medium-high heat
  8. Cradle each wrap gently and sear in the skillet, 2-3 minutes per side until golden and cheese is melted

Notes

Use frozen tortillas for easier handling
Tortillas can be substituted with low-carb/lettuce wraps for keto version
Add shredded cabbage or spinach for extra fiber
Let wraps rest 1-2 minutes post-cooking for better cheese distribution
