Ingredients

  • 2.5 lb chicken breast
  • 1 large egg
  • 1 cup finely grated parmesan cheese
  • 1 tbsp dried garlic powder
  • 1 tbsp dried onion powder
  • 1 tbsp dried oregano
  • 1 tbsp dried basil
  • 1 tbsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup sugar-free marinara sauce
  • 6 oz shredded mozzarella cheese

Method

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a shallow bowl, whisk the egg until smooth.
  3. In a second shallow bowl, combine the grated parmesan cheese with garlic powder, onion powder, oregano, basil, parsley, salt, and pepper.
  4. Dip each chicken breast into the egg wash until fully coated.
  5. Press the chicken firmly into the parmesan mixture, ensuring a complete coating on all sides.
  6. Place coated chicken onto the prepared baking sheet.
  7. Bake for 20 minutes until the crust is golden brown.
  8. Remove from the oven, spoon sugar-free marinara over each piece, and top with shredded mozzarella.
  9. Return to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.

Notes

Ensure your marinara sauce does not contain added sugars to keep the net carb count low. You can pound the chicken breasts to an even thickness to ensure they cook at the same rate. Store leftovers in an airtight container for up to 3 days.
