Ingredients

  • 2 tablespoons avocado oil, divided
  • 2 pounds ground lamb (or ground beef)
  • 1 medium yellow onion, finely diced
  • 2 stalks celery, finely diced
  • 8 ounces cremini mushrooms, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup low-sodium beef or chicken bone broth
  • 1 tablespoon gluten-free tamari or coconut aminos
  • 1 teaspoon fresh thyme leaves (or ½ tsp dried)
  • 1 teaspoon fresh rosemary, finely chopped (or ½ tsp dried)
  • 1 cup frozen peas and carrots, optional
  • 1 sea salt and black pepper, to taste
  • 0.25 teaspoon xanthan gum, optional
  • 1 large head cauliflower (about 2–2.5 lbs), cut into florets
  • 3 tablespoons unsalted butter or ghee, softened
  • 0.5 cup finely ground pork panko (plain pork rinds processed to fine crumb)
  • 0.5 cup finely shredded Parmesan cheese
  • 1 large egg, lightly beaten
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon sea salt
  • 1 pinch freshly grated nutmeg, optional

Equipment

  • Large oven-safe skillet or Dutch oven 10–12 inches
  • Food processor or blender For pork panko
  • Large pot For steaming cauliflower
  • Kitchen towel or paper towels For pressing cauliflower dry
  • Box grater or microplane For Parmesan
  • Baking sheet To catch drips

Method

  1. Bring a large pot of salted water to a boil. Add cauliflower florets and steam or boil until fork-tender, about 10–12 minutes. Drain thoroughly, then transfer to a clean kitchen towel or paper towels. Press firmly to remove as much water as possible.
  2. Place plain pork rinds in a food processor or blender. Pulse until they form a fine, flour-like consistency. Measure out ½ cup and set aside.
  3. Heat 1 tablespoon avocado oil in a large, oven-safe skillet over medium-high heat. Add half the ground lamb and cook until deeply browned, about 5–7 minutes. Transfer to a plate with a slotted spoon. Repeat with remaining oil and meat.
  4. Reduce heat to medium. Add onion, celery, and mushrooms to the skillet. Sauté 6–8 minutes until softened and mushrooms have browned. Add garlic and tomato paste, stirring constantly for 1 minute.
  5. Return browned meat to the skillet. Add broth, tamari, thyme, and rosemary. Bring to a simmer, scraping up browned bits. Reduce heat and simmer uncovered 15–20 minutes until liquid reduces. Stir in peas and carrots during last 5 minutes if using. Season with salt and pepper. If using xanthan gum, sprinkle over filling and stir well.
  6. Preheat oven to 375°F (190°C). In a large bowl, mash pressed cauliflower until smooth but not puréed. Add softened butter, pork panko, Parmesan, beaten egg, garlic powder, salt, and nutmeg. Stir until fully combined and thick.
  7. Spread filling evenly in skillet (or transfer to a 9×13-inch baking dish). Spoon topping over filling and spread to edges. Use a fork to create decorative swirls. Place on a baking sheet. Bake for 20 minutes, then broil for 2–4 minutes until topping is golden brown and slightly puffed.
  8. Let the pie rest for 10 minutes before serving. Garnish with fresh parsley or thyme if desired.

Notes

For best results, press the steamed cauliflower very dry to prevent a watery topping. Let the pie rest for 10 minutes after baking to allow the filling to set. The pork panko (finely ground pork rinds) is the secret to structural integrity and crispiness. Omit peas and carrots for stricter keto.
