Ingredients

  • 3 pounds bone-in, skin-on chicken thighs
  • Kosher salt
  • Freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken or bone broth
  • 2 large lemons, juiced and zested
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons fresh Italian parsley, chopped

Method

  1. Pat the chicken thighs completely dry with paper towels to ensure a crispy sear.
  2. Season the chicken generously on both sides with kosher salt and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat.
  4. Place chicken skin-side down in the skillet and sear for 8-10 minutes until the skin is golden brown and crispy.
  5. Flip the chicken and cook for another 5-8 minutes until cooked through.
  6. Remove chicken from the pan and set aside.
  7. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  8. Pour in the chicken broth and lemon juice to deglaze the pan, scraping up the browned bits.
  9. Simmer the sauce for 2 minutes to reduce slightly.
  10. Stir in lemon zest, thyme, and parsley.
  11. Return chicken to the pan to coat with the sauce before serving.

Notes

Ensure the chicken is patted very dry to prevent steaming.
Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C).
For extra crispiness, finish the chicken under a broiler for 1-2 minutes after searing.
