Ingredients

  • 1.5 lbs boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 lb fresh asparagus, woody ends trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, cold and cubed
  • 4 cloves garlic, minced
  • 1/4 cup low-sodium chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

Method

  1. Pat chicken cubes dry and toss with paprika, oregano, garlic powder, salt, and pepper in a bowl.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken in a single layer and sear until golden brown on all sides, then remove to a plate.
  4. In the same pan, add asparagus and sauté for 3-4 minutes until crisp-tender; remove to the plate with chicken.
  5. Add minced garlic to the pan and cook for 30 seconds until fragrant.
  6. Deglaze the pan with chicken broth, scraping up browned bits.
  7. Reduce heat to low and whisk in cold butter cubes until the sauce is creamy and glossy.
  8. Return chicken and asparagus to the pan, toss to coat, and stir in lemon juice and zest before serving.

Notes

Ensure chicken is dry before seasoning to achieve a better sear. For the glossiest sauce, whisk in the cold butter off the heat or at a very low temperature. Store leftovers in an airtight container for up to 3 days.
