Ingredients

  • 2 cups cooked shredded chicken breast
  • 8 low-carb flour-style tortillas
  • 2 cups shredded Monterey Jack cheese, divided
  • 1 tablespoon taco seasoning (ensure no added sugar)
  • 2 tablespoons butter
  • 1 tablespoon almond flour
  • 1 cup chicken broth
  • 4 ounces cream cheese
  • 1/2 cup sour cream
  • 4 ounces diced green chilies
  • 1 teaspoon garlic powder

Method

  1. Preheat your oven to 350°F and grease a baking dish.
  2. In a large bowl, combine shredded chicken, 1 cup of Monterey Jack cheese, and the taco seasoning.
  3. In a saucepan over medium heat, melt the butter and whisk in the almond flour for 1 minute.
  4. Slowly whisk in the chicken broth and cream cheese until the sauce is smooth and thickened.
  5. Stir in the sour cream and garlic powder, then remove from heat.
  6. Fill each low-carb tortilla with the chicken mixture, roll tightly, and place seam-side down in the baking dish.
  7. Pour the creamy sauce over the rolled tortillas and sprinkle with the remaining cheese and green chilies.
  8. Bake for 20-25 minutes until the cheese is melted and bubbling.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the oven to keep the tortillas from getting soggy. You can add extra heat by adding diced jalapeños to the sauce.
