Ingredients

  • 1 pound ground turkey thighs (93% lean)
  • 1 tablespoon mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Diamond Crystal kosher salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ cup fresh parsley (chopped)
  • 4 tablespoons olive oil

Method

  1. In a large mixing bowl, gently combine the ground turkey, mayonnaise, mustard, salt, pepper, garlic powder, onion powder, smoked paprika, and chopped parsley.
  2. Divide the mixture into four equal portions and gently press into 3/4-inch thick patties, making a small thumbprint indentation in the center.
  3. Place a heavy-bottomed skillet or cast-iron pan over medium-high heat and add the olive oil.
  4. Carefully place the patties into the hot pan and cook for 5-6 minutes per side without pressing down.
  5. Once the internal temperature reaches 165°F, remove the patties from the heat.
  6. Let the burgers rest on a plate for at least 3 minutes before serving.

Notes

Do not overwork the meat to ensure a tender texture. Use dark meat (thighs) to maintain moisture. Let the burgers rest after cooking to lock in the juices.
