Ingredients

  • 6 ripe peaches, peeled and sliced
  • 2 cups fresh raspberries
  • 1/3 cup cornstarch
  • 1 cup granulated sugar
  • 1 tbsp cinnamon powder
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup boiling water
  • 1 tbsp coarse sugar for sprinkling (optional halal vanilla sugar alternative)

Method

  1. Preheat oven to 375°F (190°C)
  2. Peel and slice peaches into 1/2-inch thick wedges
  3. In a large bowl, combine peaches, raspberries, cornstarch, sugar, and cinnamon. Toss gently to coat
  4. Pour the fruit mixture into a 9x13-inch baking dish
  5. For the cobbler topping: In another bowl, mix flour, baking powder, and baking soda
  6. Cut cold butter into dry ingredients using a pastry cutter until crumbly
  7. Sprinkle boiling water over the mixture and stir with a fork just until combined
  8. Drop spoonfuls of dough evenly over the fruit
  9. Sprinkle coarse sugar (or halal vanilla sugar) on top for a caramelized finish
  10. Bake for 35-40 minutes until topping is golden and fruit is bubbling

Notes

Opt for slightly underripe peaches for structural integrity
Use a food processor for smoother fruit filling if desired
Store leftovers in an airtight container at room temperature for up to 48 hours
Best served with halal vanilla ice cream or evaporated milk (non-alcoholic)
